Our Team

MacNean House & Restaurant and the Neven Maguire Cookery School employ a team of 50 people to bring you the ultimate dining and cookery school experience.

Please meet some key members of our team:

Carmel Mc Girr, Head Chef

Carmel started her career and training under Neven Maguire himself. From the beginning, Neven recognised her talent as he chose her to cook with him when he represented Ireland in the prestigious Bocouse D’Or World Cuisine Contest in 2001. Since returning to MacNean Restaurant in 2010 Carmel has shared Neven’s passion and enthusiasm for food. Carmel works closely with Neven, the kitchen team and our local suppliers to create a unique dining experience. Over the last 7 years Carmel proved her competency in her role as Sous Chef.  She has been on various stages in Restaurant Gordon Ramsay, Restaurant Patrick Guidbaud, Ox and Pied a Terre which have assisted her in creating her own unique style and flair in our menus.

Blaithin McCabe, Restaurant Manager and Sommelier

blaithinFollowing periods of work in Mitchelin star restaurants Blaithin returned to work here in 2007. During her time here she has helped to initiative passion and professionalism in the Front of House Team with an emphasis on Customer Service and true hospitality. She has undertaken numerous Wine courses to help develop the Wine list for MacNean Restaurant and The Chefs Table.


The Reservations Team at MacNean House & Restaurant

The wonderful Darren, Kathleen and Claire make up our reservations team, ensuring the full ‘MacNean Welcome’ is extended to each guest from initial reservation to final checkout.


Kevin Ashley, Gardener at MacNean House & Restaurant and the Neven Maguire Cookery School

KevinKevin began growing from a very young age in the garden with his dad. This inspired a life-long love of growing and he took over his own allotment at 11 years of age.

Kevin moved to West Cork in the 90’s and worked in Manna – Organics for ten years before moving to Cavan.

At MacNean House & Restaurant Kevin concentrates on vegetables and micro herbs. He enjoys the challenge of growing the micro herbs, ensuring they germinate at the same time for the same size, consistency and quality.

Classes at the Neven Maguire Cookery School feature tours of Neven’s extensive vegetable and herb collections, all looked after by Kevin.
